Stuffed Bell Peppers
Colorful bell peppers stuffed with seasoned ground beef and rice
These stuffed peppers are a complete meal in themselves – colorful, nutritious, and absolutely delicious.
Ingredients:
- 6 large bell peppers, tops cut and seeds removed
- 1 lb ground beef
- 1 cup cooked rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes, drained
- 1 cup shredded cheddar cheese
- 2 tablespoons tomato paste
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup beef broth
Instructions:
- Preheat oven to 375°F (190°C).
- Heat oil in a large skillet and brown ground beef.
- Add onion and garlic, cook until soft.
- Stir in tomato paste, diced tomatoes, and seasonings.
- Mix in cooked rice and half the cheese.
- Stuff peppers with meat mixture.
- Place in baking dish with broth in bottom.
- Cover and bake for 45 minutes.
- Top with remaining cheese and bake 10 minutes more.
Choose peppers that can stand upright. If needed, trim a small slice from the bottom to help them stand stable.
