A hearty, cozy chili made with lean ground turkey, tomatoes, and plenty of spices. Perfect for weeknight dinners or make-ahead meal prep.
- 1 tbsp olive oil
- 1 lb ground turkey
- 1 onion diced
- 1 bell pepper diced
- 2 cloves garlic minced
- 2 tbsp chili powder
- 1 tsp cumin
- 1 28 oz can crushed tomatoes
- 1 15 oz can kidney beans, drained
- 1 15 oz can black beans, drained
- Salt and pepper to taste
Brown turkey in oil; add onion and pepper and cook until softened.
Stir in garlic, chili powder, and cumin 30 seconds.
Add tomatoes and beans; simmer 20–25 minutes; season to taste.
For a thicker chili, simmer an extra 10 minutes.
For spicier chili, increase cayenne or add chopped jalapeño during the sauté.
Freezes well for up to 3 months.
